2/12 Fruit & Granola Parfaits Recipe

We hope most of you were able to make it in and grab one of our Fruit & Granola Parfaits in celebration of our favorite day of the year –2/12! (Ok, well since we don’t have any classes on Sundays, we celebrated this year on Monday, 2/13!)If you were able to try them – and liked them – or if you missed out, here’s the recipe so you can easily make them at home! They’re a simple and easy breakfast, snack or even dessert to keep you full and satisfy your sweet tooth.The recipe is pretty straight forward:Fruit & Granola Parfait¼ cup Plain Greek Yogurt¼ cup fresh berries- we used strawberries and blueberries¼ cup granolaThe Granola we made for these is from our favorite cookbook, Power Foods. Which means most of you have it in your kitchen. But if you need the link, you can check it out here.The only substitution we made, in keeping with the Sugar Slash, was to sub the honey for about 6 Medjool Dates. The honey version is definitely a little bit sweeter, but when combined with berries, you’ll be surprised how sweet this “unsweet” recipe can be.
