Awesome Homemade Energy Bars

One of the most common challenges I hear when an athlete is cutting out added sugar is finding good tasting, quick snacks. This is a straight up amazing tasting soft granola bar with no added sugar (the original recipe does have a sweetener, but see note by dates) that Sara brought in to class the other day and shared.You will seriously be surprised at how good these taste, and even better, you’ll know exactly what’s in them! Here’s the original recipe and Sara’s version is listed below. Enjoy!What I used for that batch was:1 can chickpeas (rinsed and drained)1/4 cup flax seed meal + 1/4 cup water1/2 cup chopped dates (if you skip adding a sweetener, you double the original amount from 1/4 cup to 1/2 cup of a soft fruit)1 teaspoon vanilla extract1 teaspoon cinnamon1/4 tsp sea salt1.5 cups steel cut oats1 cup Vega vanilla protein powder1/2 cup chopped pistachios1/2 cup dried cranberries (for a total of 1 cup stir-ins) My recipe was pretty dry so I needed to add 1/4 cup water at the end so that it was spreadable. Baked at 350 for 15-18 minutes and voila: a delicious and nutritious protein-packed granola bar!
