Don't Like Veggies? Roast Them!

A lot of you have done an excellent job making positive goals for your nutrition in the past few weeks. One of the most frequent goals I hear is “I need to eat more veggies.”This is a great goal because the more vegetables you eat, the less unhealthy foods you’ll eat. However, many of us struggle with eating veggies.The best way for me to eat veggies is to roast them with dinner. They taste amazing and I can’t get enough of them. I’ve listed a great roasted broccoli recipe below-the best part is how simple it is!Another great option is to just load up a container with some raw veggies and pack it with your lunch. Veggies are a lot easier to eat when they’re all that you packed for a snack!Roasted Broccoli: (works great for cauliflower too!) Oven @ 400| Roast for 25 -30 minutes (flip once during bake time)3-4 Broccoli florets, chopped into small pieces and large stems removed1-2 Tablespoons Olive Oil1 teaspoon Sea Salt1 teaspoon PepperCover baking sheet with parchment paper and spread broccoli out in an even layer. Drizzle olive oil over top and toss to distribute evenly. Sprinkle sea salt and pepper over top. Remove from oven once golden and crispy.
