Super quick, easy and refreshing for these HOT summer days!Mango Chia Pudding with Cherries & ApricotsMakes two generous portionsFor the pudding: Mix 1 cup coconut milk in a blender with a generous handful of frozen mango chunks. Blend on high until smooth. Pour blended mixture into a bowl and mix in about 3 Tbs of chia seeds. Stir well and refrigerate for at least two hours.To serve: Top with chopped cherries, apricots, a dollop of peanut butter and drizzle with honey to taste.Try other variations! Of course the pudding can be made with frozen berries and topped with fresh mixed berries and a handful of chopped nuts or granola.Thanks so much Jackelin!
