Sweet Potato & Beef Chili

Recipe Inspiration: Our Jumpstart January Challenge is over half over and your energy may be waning! Even though we're not doing a Whole30 Challenge, this recipe is adapted from the Whole30 cookbook and is one of our favorites. Although there aren't any beans, it's hearty and delicious and is a great option for one of your unprocessed meals!

  • 2 cups chopped onion
  • 3 cloves garlic
  • 1 lb ground beef
  • 28 oz. (or more if you prefer more sauce) diced tomatoes
  • 1 cup beef broth
  • 2-3 cups sweet potato, peeled and chopped into 1/2 inch chunks
  • 2 TB chili powder
  • 1/2 t salt

Saute onion and garlic in 1-2 TB of coconut or olive oil until fragrant. Add beef and break up into small pieces until cooked thoroughly.

Add tomatoes, broth, sweet potatoes, chili powder and salt and bring to a boil. Reduce to low simmer and cover, cooking until sweet potatoes are tender, about 25 minutes.

If you your chili spicy, add chilies and spices to add some heat. We've made this a dozen different ways and it's pretty hard to mess up.

Top with green onions and cilantro!
